Grilled Herbed Red Potatoes

Grilled Herbed Red Potatoes

serves two

​

4 red potatoes, sliced about 1/2 inch thick

1 teaspoon salt

assorted chopped fresh herbs such as italian parsley, thyme, dill and chives

lemon

olive oil

​

Preheat your grill to medium high heat.

​

Fill a medium saucepan with water, add salt. Bring to a boil. Add potatoes and reduce to a low

boil, boil about 5 minutes until softened slightly.

​

Remove potatoes from saucepan and lay on paper towels, blot to dry.

Toss with olive oil.

​

Coat grill with cooking spray. Place potatoes on grill and grill about 3 minutes per side until

cooked through and the potatoes have nice grill marks.

Drizzle with olive oil, fresh herbs and a spritz of lemon juice.
