Prosciutto and Basil Wrapped Shrimp
Grilled Prosciutto and Basil Wrapped Shrimp

This is an easy and pretty appetizer. I always cook on my outdoor grill, but you could easily do
this on the stovetop in a grill pan or even in a skillet.
12 large shrimp (12-16/pound size work well), peeled and deveined, tails left on
12 large basil leaves
6 slices of prosciutto cut in half lengthwise to make 12 strips

Preheat your grill to medium high heat.

On a flat surface lay a strip of prosciutto, then lay a basil leaf on top. Place the shrimp at one
end and roll the strip around the center of the shrimp. Press end to seal.
Coat your grill with cooking spray. Place shrimp on grill and cook about 3 minutes per side or
until shrimp turns opaque and the prosciutto is crispy at the edges.
