Apple, Celery and Snap Pea Salad

Apple, Celery and Snap Pea Salad

serves 4-6

This is so summery and fresh. It pairs PERFECTLY with my Lemon Herb Grilled Chicken. It’s a

simple and healthy summer dinner!

​

1/4 cup extra virgin olive oil

1/4 cup freshly squeezed lemon juice

3 tablespoons white wine vinegar

2 tablespoons agave nectar

salt/pepper

1 cup snap peas, cut in half diagonally

1 cup chopped fresh cilantro

3 granny smith apples, unpeeled and cut into julienne strips

3 stalks celery, chopped

1 jalapeno, thinly sliced

1 red onion, thinly sliced

In a small bowl combine the olive oil, lemon juice, vinegar, agave and salt/pepper to taste. Stir to

combine.

In a large bowl combine the remaining ingredients. Add the vinaigrette to the bowl and toss to

combine. Cover and refrigerate up to an hour. Can be made a few hours ahead, just toss with

vinaigrette before serving.
