Perfect Basic Bruschetta
makes about 12 pieces

Bruschetta has been around forever, but usually there is too much bread, the toppings are wet
and that makes the bread soggy! I like these because the tomato, garlic and basil mixture is
very clean and crisp tasting. Not heavy with a bunch of other ingredients. I just keep it simple
and by using the baguette, each slice is just about two bites! Very manageable while holding a
cocktail!

3 large roma tomatoes
3 large garlic cloves, minced
10 large basil leaves, cut into strips and chopped (chiffonade)
1/2 teaspoon salt
Olive Oil

Cut tomatoes in half and scoop out pulp and seeds, save for another use. Slice and chop
tomatoes into a small dice. Place in glass bowl and sprinkle with 1/2 teaspoon salt. Let sit 5
minutes.

Add minced garlic and basil. Stir to combine, add extra virgin olive oil to taste (maybe 1
tablespoon).

Slice baguette crosswise into 1/2 inch thick slices. Heat a pan coated with a small amount of
olive oil. Toast the bread slices in the pan until lightly browned.

Place a heaping tablespoon of tomato mixture onto each toasted bread slice and serve.
