Brussels sprouts Salad with Dried Fruit and Nuts

Shaved Brussels Sprouts Salad with Dried Fruits and Nuts

Serves 6-8

This is a very nice alternative to a warm brussels sprouts side dish. Make at least an hour

ahead to allow the brussels sprouts to soften a bit. It is perfect on a buffet because it doesn’t get

soggy and it is even good the next day!

​

1/2 cup lemon juice

1 tablespoon dijon mustard

1 tablespoon honey

1/2 cup extra virgin olive oil

salt/pepper to taste

1 16-ounce bag shaved brussels sprouts (or 16 ounces whole brussels sprouts, sliced very thin)

1/4 cup chopped dates

1/4 cup chopped pecans

1/4 cup dried cranberries

1/4 cup very thinly sliced red onion

Place sliced red onion in a water/ice bath and set aside. (This will mellow out the flavor of the

onion).

Make dressing:

In a small bowl combine lemon juice, mustard and honey and whisk together to combine. Add

olive oil slowly, whisking to incorporate. Add salt/pepper to taste.

In a large bowl combine sprouts, dates, pecans, cranberries. Remove onions from water and

dry. Finely chop onions and add to sprout mixture. Toss all ingredients together and add

dressing to taste. Set aside in the refrigerator for at least an hour to allow flavors to combine

and sprouts to soften a bit.
