Fresh and Crispy Coleslaw

serves 6-8
12-16 ounces coleslaw mix (white cabbage, red cabbage, carrots)
1/2 of a jicama, thinly sliced
1 red bell pepper, thinly sliced
1/2 red onion, thinly sliced
1/2 cup pepitas, toasted
1/2 cup seasoned rice wine vinegar
1/2 cup mayonnaise (low fat ok)
Combine first 4 ingredients in large bowl. Whisk together vinegar and mayonnaise.
Add dressing to vegetable mixture and toss to combine.
Just before serving toss in pepitas.
