Fig, Peach and Prosciutto Platter

This is a very simple, but show stopping appetizer. You can really use any combination of fruits
and prosciutto..I happened to have figs and peaches which looked so gorgeous with the
prosciutto. The recipe is just a guideline.

10 figs, quartered if large, halved if small
1 peach, pitted and sliced into 12 pieces
4 ounces of prosciutto
wedge of parmesan
chopped pistachios

On a pretty platter or wooden board, arrange the figs at one end, then the peaches in the
middle, the tear the prosciutto into strips and kind of place in small piles at the other end of the
board. Alternatively, you could wrap the fruit with the strips of prosciutto…but nice to keep
separate if you have vegetarian or vegan guests.

Using a vegetable peeler, peel shards of parmesan over the platter and sprinkle with chopped
pistachios.
