Grilled Watermelon, Feta and Arugula Salad

Grilled watermelon! What a summer treat! You can eat it on it’s own, put in a salad or I’m sure

we could come up with a cocktail! LOL

Give it a try, so easy breezy!

Use the remaining dressing to marinate some chicken!

serves 4

​

1 small watermelon, sliced into 1” thick pieces, rind removed

1 package feta cheese, in a block, sliced about 1/4 inch thick, then crumbled slightly

1 package arugula

1/8 cup EACH chopped fresh basil and mint

 

2 tablespoons fresh lime juice

2 tablespoons white wine vinegar

2 teaspoons honey

2 teaspoons fresh thyme, chopped

1 small shallot, minced

1 serrano chile, stemmed and seeds removed, minced

3/4 cup olive oil

salt/pepper to taste

Heat your grill to medium. Dry off the watermelon with paper towels and brush with olive oil.

Place on the grill for approximately 1-2 minutes per side..do not overdo this or it will get mushy.

Set aside.

In a small bowl combine the lime juice, vinegar, honey, thyme, shallot and serrano and stir to

combine. Whisk in the olive oil and season with salt and pepper. Set aside.

Toss the arugula with a small amount of the dressing, place on a platter. Arrange the grilled

watermelon and feta on top of the arugula. Sprinkle chopped mint and basil on top and drizzle

with the dressing.
