Halfway-to-Hawaii Colada

Half Way to Hawaii

 

I created this drink because my husband loves Pina Colada’s, but they are so heavy and fattening I just had to make a lighter version. 

He took one sip and said, “this tastes like I’m Halfway to Hawaii”..LOL

I added egg white to make it frothy and creamy, but you can omit if you are vegan or uncomfortable using raw egg whites.

 

4 pineapple cubes

4 mint leaves

1/2 lime

 

1 egg white (optional)

2 ounces coconut rum (like Malibu)

1 ounce gold rum

1 ounce pineapple juice

1 ounce creme de coconut (find with mixers in liquor department)

 

Zest of half a lime

 

In a shaker…muddle pineapple cubes, mint leaves and lime.

 

Add rest of ingredients, except zest. Shake 20 times to emulsify egg white (if using). This is called “dry shaking”…shaking without ice. This will emulsify the egg white better. If you’re not using the egg white then you can skip the “dry shake”.

Add ice to shaker.

Shake, shake, shake…like 40 shakes until you hand sticks to the shaker!

Pour into a martini glass. Garnish with the lime zest.
