Honey Dijon Grilled Lambchops
Honey Dijon Grilled Lamb Chops
makes 8 chops, 2-3 servings
This is a very easy and quick main course. I have also done this as small chunks of lamb on skewers as an appetizer for a party. And you can broil if you do not have a grill handy.
The glaze compliments the lamb perfectly and cuts out any “gamey-ness” that lamb can have, but you have to be careful because the honey will cause the glaze to burn…this is why we just coat the top side after we have flipped it over.
1/4 cup dijon mustard
3 tablespoons finely chopped fresh rosemary
1/3 cup finely chopped fresh mint leaves
1/4 cup honey
s/p
1 rack of lamb, frenched and cut into 8 chops
Combine all ingredients except lamb. Preheat grill to med-high. Oil the grates. Season lamb lightly with salt and pepper. (As always, remove lamb from refrigerator about 15 minutes before cooking to allow it to come to room temperature.)
Place lamb on grill, grill approximately 3-4 minutes, flip over and brush top side with glaze. Since the glaze contains honey it will easily burn so we just coat top side after we have flipped. Grill another 3-4 minutes depending on desired temperature and thickness of chop.
