Mediterranean Guacamole

Mediterranean Guacamole

Makes about 2 cups

​

This is an interesting twist on your standard guacamole. Great with chips, but fab with veggies,

too!

2 chopped avocados

1/4 cup finely chopped red onion

1 garlic clove, minced

2 tablespoons chopped italian parsley

1/2 teaspoon dried oregano

1 teaspoon olive oil

1 tablespoon seasoned rice vinegar

1/4 cup crumbled feta cheese (low fat is fine)

Squeeze of lime

Combine all ingredients and gently stir to combine. Best made just an hour or so before serving

so the avocado doesn’t darken.
