Mint Simple Syrup and Holli's Mojito
Mint Simple Syrup
makes about 3/4 cup

3/4 cup sugar
3/4 cup water
15 mint leaves
​
In a small saucepan, combine sugar and water over medium heat. Simmer and stir until sugar
has dissolved. Remove from heat and add mint leaves. Steep approximately 30 minutes.
Strain mint leaves out and store in sealed container in the refrigerator. Will keep for up to 2
weeks.

Holli’s Mojito
serves one
​
1 1/2 ounce rum
1/2 ounce mint simple syrup*
1/2 lime, cut into wedges
4-5 mint leaves
club soda
​
In a shaker, muddle mint syrup with lime and fresh mint leaves. Add rum. Shake to combine(no
ice). Strain into rocks glass filled with ice, top with club soda. Garnish with fresh mint and a
wedge of lime.
