Oven Roasted Lemony Salmon

serves 6

preheat oven to 500 degrees

I came upon this recipe years ago when I was looking for an easy way to roast salmon in the

oven instead of grilling as I usually do. The marinade is kind of like a caesar salad dressing and

then the vinaigrette sauce reinforces those flavors.

Marinade

2 lemons, zested and juiced

1/8 cup olive oil

1/8 cup dijon mustard

2 garlic cloves, minced

3/4 tablespoons salt

1/4 tablespoon pepper

3 pounds salmon filets

Vinaigrette

1/4 cup champagne vinegar

1 teaspoon dijon mustard

1 teaspoon kosher salt

1/2 teaspoon black pepper

1/2 cup extra virgin olive oil

​

For the marinade …whisk together the lemon zest, lemon juice, olive oil, mustard, garlic and s/p

in a small bowl and set aside.

​

Remove salmon from the fridge and let sit 15 minutes to help come to room temperature.

Cover a sheet pan with aluminum foil and place the salmon on it. Drizzle the marinade over the

salmon and let sit at room temperature for 15 minutes.

Place the salmon in the oven and roast for 15 minutes for medium rare.

For the vinaigrette…combine vinegar, mustard, s/p and slowly whisk in olive oil to create an

emulsion. This will make plenty and will store in fridge for up to a week.

Serve the salmon with a drizzle of the vinaigrette on top.
