Planked Spiced Salmon Chunks

serves 6 as an appetizer

 

I make this recipe in my pizza oven, but a grill would work as well.

 

Prepare the plank for cooking by soaking in water for 30 minutes.

 

Prepare your grill to medium heat.

 

1 1/2 - 2 pounds salmon, skin removed, cut into 2” cubes (try to get the thicker parts of the salmon so you actually can make “cubes”)

 

Rub mixture:

2 tablespoons sweet paprika

3 teaspoons dried thyme

1 teaspoon flaked salt 

1/2 teaspoon freshly ground black pepper

5 tablespoons brown sugar

 

stir all to combine

 

with your hands rub the spice mixture all over the salmon chunks

 

Place the salmon chunks on the prepared plank, place on the grill over medium heat, cook apprx 10 minutes or to your desired degree of doneness. 

The plank will get charred, this is fine and why you soak it first.

 

Serve with toothpicks, or forks if you are fussy!
