Planked Shrimp
Planked Shrimp
serves 6 as an appetizer
I make these in my pizza oven, but a grill would work as well.
Prepare your plank by soaking in water for 30 minutes.
Prepare your grill to medium.
1 pound 16-20 shrimp (this means that there are 16-20 shrimp per pound), shells removed.
(I like to leave the tails on because I think it makes a better presentation and gives your guests a “handle”, but then you are left with the pesky tails and need plates..so your call)
Marinade:
Juice AND zest of 1 lemon
1/4 cup extra virgin olive oil
salt and pepper
1 tablespoon red pepper flakes
2 cloves garlic, pressed
1 tablespoon freshly chopped rosemary
Combine all marinade ingredients and add shrimp. Marinate for no longer than 15-20 minutes or the juice will start to cook the shrimp.
Lay on plank and place plank on grill. Grill apprx 5-7 minutes until shrimp turns opaque.
