Prosciutto Asparagus Wraps

Prosciutto Wrapped Asparagus

makes 12 “roll ups”

 

This is one of my “go to” appetizers. Super easy, quick to make and always much enjoyed. 

I always keep pre-packaged prosciutto in my fridge. You could also do this with breadsticks in place of the asparagus!

 

12 asparagus spears…best about 1/4-1/2 in diameter, woody ends trimmed off

6 slices of prosciutto, cut in half length-wise

honey mustard

 

 

Prepare a water/ice bath. This means to fill a large mixing bowl with cold water and ice.

Fill a skillet with water and 1/2 teaspoon of salt. Bring to a light boil, then reduce to simmer.

Add asparagus. Cook just a few minutes until asparagus is still firm (al dente). 

Using tongs, pull asparagus out of boiling water and plunge into water/ice bath. Move around a bit to thoroughly chill the asparagus and stop the cooking process. Dry off the asparagus. 

(at this point recipe can be prepared a few hours ahead and refrigerated)

 

On your cutting board, slice the prosciutto in half lengthwise. Lay out your 12 slices, spread each slice with a little honey mustard. Take an asparagus spear and roll a prosciutto slice up the length of the spear.
