Smoky Grilled Pineapple Margarita

I decided to grill some pineapple the other day and thought, hmmmm…what can I do with this?
It’s smoky and sweet…maybe a margarita with mezcal to make the “smoky” aspect pop!
So a new drink was born!

1/4 cup chopped grilled pineapple*
5-6 mint leaves (torn in pieces)
juice of 1/2 lime
2 teaspoons agave
2 ounces tequila
1 ounces mezcal

smoked sea salt for rim (Maldon makes a good one)
Prepare your glass
Rub the rim of a rocks glass with lime and dip in the smoked salt. Fill with ice.
In a shaker combine the pineapple, mint, lime juice and agave syrup. Muddle well to combine
and break up the pineapple. Add tequila, mezcal and ice…shake, shake, shake. Strain into the
prepared glass.
*Grilled Pineapple
Heat your grill to medium heat and spray with cooking spray. Cut your pineapple into 1/2 inch
slices and dry with a paper towel. Place pineapple slices on the grill and grill for approximately 2
minutes per side until you see grill marks.
