Spicy Pickled Red Onions
makes about 1 1/2 cups

These are a very tasty condiment for a burger, tacos or even a salad. Would be great on a
charcuterie platter, too! Spice level will vary depending on how spicy your chile is, but you can
easily omit chile if spice isn’t your thing!

1 1/2 cups champagne vinegar
1/2 cup sugar
2 bay leaves
1 small red chile pepper, thinly sliced
2 teaspoons whole black peppercorns
2 teaspoons coriander seeds
2 small red onions, sliced about 1/4 inch thick

Combine all ingredients (except onions) in a small saucepan over medium heat. Stir and simmer
until sugar is dissolved. Remove from heat.
Place sliced onions in a heatproof bowl or container, pour hot liquid over the top and mix to
cover onions completely. Let sit on counter to cool. Store in sealed container in refrigerator for
up to two weeks.
