Stuffed Dates Wrapped in Prosciutto
Karyn’s Stuffed Dates
makes 24 dates (I usually plan 2-3 per person)
I have a friend I have known for years and when she is coming for dinner and I ask her… “any
special requests for an appetizer?”….. she always replies.. “How about those yummy stuffed
dates?”

24 Medjool dates, pitted (if the pits are still inside, just slit the date and pull out the pit)
Chunk of blue cheese (or you can use the crumbled packaged blue cheese or gorgonzola)
12 slices prosciutto, cut lengthwise into two to give you 24 pieces
Open up a date. Stuff with blue cheese..maybe a teaspoon or so depending on the size of the
date. Wrap with prosciutto.
Preheat oven to 350 degrees. Place dates on a foil lined baking sheet. Bake until sizzling
approximately 20 minutes depending on the size of the dates.
(alternatively you can do these in a skillet on the stove, just heat until crispy and sizzling)
You can prep the dates earlier in the day, just bring to room temperature before cooking.
