Watermelon Caprese Skewers

makes 12 skewers

This is a super refreshing summer appetizer! The salty cheese with the watermelon is a perfect

combination.

 

Watermelon - cut into 24 one inch cubes

Queso Fresco, Feta or Mozzarella cheese - cut into 12 one inch cubes

Basil leaves - cut into long thin strips (chiffonade)

Olive oil

salt/pepper

Using small wooden skewers (5-6” long), skewer a cube of watermelon, a cube of cheese and

another cube of watermelon.

Drizzle with olive oil, sprinkle with salt and pepper and top with basil strips.
