Watermelon Gazpacho
Watermelon Gazpacho
serves 3-4

While regular gazpacho is very refreshing, this takes it one step further. The watermelon just
makes it lighter, not sweet. Add more serrano for a bit more spice!

This makes a great Bloody Mary, just reserve a portion and give it a bit more time in the blender!

2 cups cubed watermelon
2 cups chopped tomatoes
2 small cucumbers, peeled, seeded and chopped
3 tablespoons chopped red onion
1 serrano chile, seeded and chopped
2 teaspoons red wine or sherry vinegar
2 teaspoons coarse salt
1 tablespoon freshly squeezed lime juice

Combine all ingredients in a blender and puree to a chunky texture. Chill at least an hour.
Garnish with any, or all, of the following: sour cream, cilantro, red onion and avocado.
